Since it’s the Friday before Thanksgiving, I only have one thing on my mind: turkey. (And maybe cookies, pies and cranberry sauce…but that’s a different post.)

    I like to bake a capon instead of a turkey for Thanks Giving. It is juicier and more refine meat to my taste. My stuffing is made with Foie Gras and chestnuts, so it melts into the meat and gives it a beautiful scent. I bake the bird with small organic veggies like carrots, mushrooms, small potatoes, etc… I cook all kinds of sides mostly French except the Sweet Yams cooked with maple syrup and cinnamon.
    As if we were not spoiled enough, the dish has to be served with Champagne which requires homework to pick the right food/wine match… I already have several ones in mind for Thursday. Happy Thanks Giving, O. D
